Cooking - Au Gratin Potatoes with Sausage

Au Gratin Potatoes with Sausage Recipe

Ingredients:
2-3 pkg kielbasa sausage, cut into 1-inch pieces
6 celery ribs, chopped
1 medium onion, chopped
3 Tbs olive oil
3 Tbs butter
3 Tbs flour
1-1/2 tsp salt
1/8 tsp pepper
2 C milk
1 C cheddar, shredded
8 medium potatoes, peeled and thinly sliced

Directions:
In a large skillet, sauté the sausage, celery and onion in olive oil until vegetables are tender. Once done, remove the mixture from the skillet, and set aside.

In the same skillet, melt butter over low heat. Stir in flour, salt and pepper until smooth. Gradually add milk, whisking continuously to keep smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat to low; stir in cheese until melted. Add potatoes, and the sausage mixture.

Cover and simmer for 20-25 minutes or until potatoes are tender, stirring once.

Cooking - Meatball Sliders

Meatball Sliders Recipe

Ingredients:
1 lb ground beef
1 lb ground pork
3/4 C bread crumbs
1/2 C grated Parmesan cheese
1/2 C milk
1/4 C flat-leaf parsley, minced
3 cloves garlic, minced
2 eggs, beaten
1/2 tsp salt
ground black pepper, to taste
2 Tbs olive oil
1/2 medium onion, diced
2 jars marinara sauce
24 Hawaiian rolls, or dinner rolls
2 C mozzarella, shredded

Directions:
Mix the meats with the breadcrumbs, Parmesan, milk, parsley, garlic, eggs and seasonings; knead together with hands. Roll into heaping tablespoon-sized balls.

Heat olive oil in skillet. Add onions and cook for 1 minute. Add meatballs, in multiple batches, and brown for 1 minute.

Pour in the marinara sauce, and gently shake skillet to mix. Put on a lid and simmer for 20-25 minutes.

When the meatballs are ready, cut each roll in half. Add some mozzarella to bottom bun, top with meatball and sauce, add more mozzarella and top bun.

Cooking - Bruschetta Chicken

Bruschetta Chicken Recipe

Ingredients:
2 lbs boneless skinless chicken breast halves
6 Tbs olive oil
Garlic salt, to taste
Pepper, to taste
1/2 C grated Parmesan cheese
1/2 C dry bread crumbs
2 Tbs butter, melted
4 large tomatoes, seeded and chopped
6 Tbs fresh basil, minced
2 Tbs olive oil
4 garlic cloves, minced
1/2 tsp salt
1/4 tsp pepper

Directions:
Preheat oven to 375 degrees. In a large skillet, brown chicken in olive oil, add garlic salt and pepper. Once cooked through, remove chicken and set aside in a greased 13"x9" casserole dish. In a small bowl, mix cheese, breadcrumbs and butter; sprinkle over chicken.

In a small bowl, toss tomatoes with the remaining ingredients. Spoon tomatoes over chicken; bake for 3-5 minutes or until tomato mixture is heated through.
